Dr. Sophie Chen from Botaniclab (Los Angeles), is a highly respected Taiwanese
herbalist and a former Merck biochemist. She is the formulator of the world-renown
SPES products. According to her, one can make one's own preparation from
one-half cup of fresh soy beans. If fresh is not available, use dried ones,
although fresh is preferred.
Soak whole beans with some salt overnight
with 5 times as much water as whole beans.
- Change water in the morning and blend in high speed blender.
- Bring the mixture to a boil in glass or stainless steel pan, keep stirring, reduce heat and simmer for 4 or 5 minutes.
- Let cool and skim foam off the top.
- You can add flavour but never sugar.
It's best to drink the mixture during the first 6 hours.
You can keep it another day in a glass jar
refrigerated so that there will be little oxidation. Don't drink more then
2 cups daily as this is a very potent source of phytoestrogen. Chinese
doctors find this drink as potent as the medicinal (and quite expensive)
soy drinks in prevention and treatment of cancer.
